Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 lb baby Yukon Gold potatoes, halved
  • 12 oz haricots verts (thin French green beans), trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the baby Yukon Gold potatoes with 1 tablespoon olive oil, half the minced garlic, salt, pepper, and Italian seasoning.
  3. Spread the potatoes out on a sheet pan and roast for about 10 minutes to get them started.
  4. Season the chicken with garlic powder, onion powder, paprika, salt, and pepper.
  5. Add the chicken and haricots verts to the pan with the potatoes. Drizzle the remaining olive oil over the green beans.
  6. Scatter over the rest of the garlic and squeeze fresh lemon juice all over the chicken and vegetables.
  7. Return to the oven and bake another 18–22 minutes, until the chicken is cooked through and the potatoes are tender and golden.
  8. Finish with one more squeeze of lemon right before serving.

Quick Tip: Grab pre-washed haricots verts and halved baby Yukon Golds if you want to make this even faster on a busy night.

Meal #2 Honey-Garlic Salmon with Calabrese Broccoli & Brown Rice

Ingredients

  • 4 salmon fillets
  • 4 cups broccoli florets
  • 2 cups cooked brown rice
  • 2 tablespoons honey
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F.
  2. In a small bowl, combine the honey, soy sauce, garlic, and lemon juice.
  3. Place the salmon on a lined sheet pan and brush generously with the honey-garlic mixture.
  4. Toss the broccoli with olive oil and black pepper and arrange it around the salmon.
  5. Bake for 12–15 minutes, or until the salmon flakes easily with a fork and the broccoli is tender.
  6. Warm the brown rice while the salmon cooks.

Ingredients

  • 1 lb lean ground turkey
  • 8 oz pasta
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • 2 cloves garlic, minced
  • 1 egg
  • ¼ cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Grated Parmesan, optional

Instructions

  1. Bring a pot of water to a boil and cook the pasta according to the package directions.
  2. Meanwhile, combine the ground turkey, egg, breadcrumbs, Italian seasoning, garlic powder, salt, and pepper.
  3. Form the turkey mixture into small meatballs.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Cook the meatballs for about 10–12 minutes, turning occasionally, until browned and cooked through. Remove them from the skillet.
  5. Add the remaining olive oil, zucchini, tomatoes, and garlic to the same skillet. Cook for about 4–5 minutes.
  6. Add the spinach and cook just until wilted.
  7. Toss the cooked pasta with the vegetables and return the turkey meatballs to the skillet.
  8. Sprinkle with Parmesan if desired and serve warm.

  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, sliced
  • 1 can black beans, drained and rinsed
  • 2 cups cooked brown or white rice
  • 1 avocado, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 lime
  • Fresh cilantro, optional

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the chicken with chili powder, cumin, garlic powder, paprika, salt, and pepper.
  3. Cook the chicken for 5–7 minutes, stirring occasionally, until browned and cooked through.
  4. Add the peppers and onion. Cook for another 4–5 minutes, keeping the vegetables slightly crisp.
  5. Warm the black beans and rice.
  6. Divide the rice among four bowls.
  7. Top each bowl with chicken, colorful peppers and onions, black beans, and sliced avocado.
  8. Finish with fresh lime juice and cilantro.

Meal #5 Garlic Shrimp with Green Asparagus & Orange Sweet Potatoes

Ingredients

  • 1 lb peeled and deveined shrimp
  • 1 bunch asparagus, trimmed
  • 2 medium sweet potatoes
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 lemon
  • Fresh parsley, optional

Instructions

  1. Pierce the sweet potatoes several times with a fork. Microwave for 6–10 minutes, turning halfway through, until tender. Cooking time will depend on their size.
  2. While the potatoes cook, heat 1 tablespoon olive oil in a large skillet over medium heat.
  3. Add the asparagus, season lightly with salt and pepper, and sauté for 5–7 minutes until bright green and tender-crisp. Remove from the skillet.
  4. Add the remaining olive oil and garlic to the skillet and cook for about 30 seconds.
  5. Add the shrimp and season with paprika, garlic powder, salt, and pepper.
  6. Cook for 2–3 minutes per side, or until the shrimp are pink and opaque.
  7. Squeeze fresh lemon juice over the shrimp and asparagus.
  8. Serve alongside the sweet potatoes and garnish with parsley if desired.
