1lb smoked ham or ham hock

How to Make It

Warm olive oil in a large pot over medium heat.

Add onion, carrots, and celery. Cook until soft and fragrant.

Stir in garlic and let it bloom gently.

Add split peas, broth, bay leaf, onion powder, and thyme.

Bring to a gentle boil, then lower heat and simmer for 45–60 minutes, stirring occasionally.

Remove bay leaf. Season with salt and pepper.

Mash slightly or blend a portion for a creamier texture if desired.
